Carrot cake

INGREDIENTS:

  • 225g carrots
  • 225g flour
  • 4 teaspoons baking powder
  • pinch of salt
  • 2 eggs
  • 2 teaspoons cinnamon
  • 140g brown sugar
  • 2 tablespoons orange juice 
  • 125ml oil
FOR THE ICING:
  • 120g cream cheese
  • 6 tablespoons icing sugar

METHOD:

1.Grate the carrots. Put the flour and baking powder into a bowl. Mix in the carrots, salt, brown sugar and cinnamon.

2.Beat the eggs. Add the eggs, oil and orange juice to the cake mixture. 
Mix well.

3.Put the misture into the cake tin. Bake at 180º C for 70 minutes. Leave the cool.

4.Beat the cream cheese and the icing sugar. Spread over the cake.
